Use Up Leftover Rice – Broccoli Rice Recipe

I always seem to cook too much rice. Do you do that? I hope I'm not the only one!

The following broccoli rice recipe is a great way to use up leftover rice and boost nutrition at dinner.

The ingredients can be tweaked to suit your taste. Add extra cheese, or leave it out all together.

Extra vegetables would also be excellent. Mushrooms and red pepper would be well suited to this dish.  Add them along with the onions and saute.

Broccoli Rice

Adapted from the  More-with-Less Cookbook.

Ingredients

1/4 cup butter
1 1/2 – 2 cups cooked brown rice
1 onion, chopped
3/4 – 1 cup grated cheese
2 – 3 cups broccoli, chopped, cooked and drained
1/2 cup milk
Salt and pepper to taste ( I used a few shakes of seasoned salt and a little pepper)

Method

Melt butter in skillet and add onion. Saute until soft and translucent. About 10 minutes.

Mix all ingredients in a large bowl.

Pour into a greased casserole dish, cover and bake at 350 degrees for 40 minutes.

Serve alongside fish, chicken, or beef.

  1. Rice pudding! We just made some tonight. I also freeze leftover rice to add to leftover meat and veggies as a quick lunch to take to work and warm up with some soya sauce. Or we use it later for fried rice (using leftover pork or chicken that we cubed and kept in the freezer).

    1. Great ideas, Heidi. I forgot about rice pudding, we like that, too. I’ve also made rice pancakes a few times. They were interesting 🙂
