According to the Encylopedia of Healing Foods, strawberries are an excellent source of vitamins C and K, dietary fiber, and also a good source of manganese, pantothenic acid, vitamin B1, and iodine.
Strawberries are also a good source of folic acid, biotin, and Vitamin B6.
The intense red color of strawberries is mostly due to their high flavonoid content (anthocyanidins in particular).
These flavonoids make strawberries useful in fighting inflammation, cancer, and heart disease.
Strawberries are an excellent treat for those trying to cut down on refined sugar consumption. The sweetness of fresh, ripe strawberries is quite satisfying to most any sweet tooth.

We go through a far number of strawberries at my house. I am totally doing the Strawberry Coconut Milk Pancakes next Sunday…I make some type of pancake for my kiddos every weekend. I am hoping the arrowroot powder doesn’t make the pancakes too gummy.
FYI…any type of “flax-jack” style pancake is a hard sell to toddlers. Just saying.
